It's hard to say--maybe because it was the year that the New Orleans Rhythm Kings recorded. It was also the first year Jelly Roll Morton recorded.

And Jelly Roll recorded with the Rhythm Kings--a brilliant feather in the cap for the NORK:

But some would argue that nobody's ever heard of the NORK, and that 1923 is most important instead because it's the year of the first recordings by King Oliver.

And King Oliver had Louis Armstrong in his band, which is a brilliant feather in the cap for both of them:

What about Armand Piron? Another first for 1923.

Some might argue that his sound is not exactly what they think of as jazz, but this is one of the bands that stayed in New Orleans. He didn't move to chicago or New York, to be affected by outside influences, so many argue that this is the real sound of new Orleans:
